The useful distinction is not the number of stops, it is the geographic spread and how many oceans you cross. A 3-stop trip within Europe (London, Paris, Rome) is fine to book yourself. A 3-stop trip that crosses two oceans (New York, Tokyo, Sydney) has real routing complexity and is worth a conversation.
Where we earn the fee is anything touching the transpacific crossing, the Middle East, intra-Asia connections, or the Australia to Europe kangaroo route. In those regions the obvious flight, the one you see on Google Flights, frequently does not book on the fare class you need.
